#SusanCooksVegan: One Bowl Cheesy Vegan Beer Bread

This One Bowl Cheesy Vegan Beer Bread has a lovely, earthy, malty flavour with a buttery, crispy exterior and a soft, moist interior. It is the easiest bread you are ever going to make and a great way to use up any leftover beer. It requires no kneading, no rising and you only need one bowl so there is very little mess to clean up. Store in the fridge for 4-5 days and toast them whenever you are craving this warm slice of heaven.

If you make extra, freeze for up to four months or give a loaf as a gift. Making homemade bread has never been so easy. There is nothing like pulling freshly baked bread straight out of the oven. Would you not agree?

Why Use Beer In a Bread Recipe?

Beer causes bread to rise just as if you were using active dry yeast. Use your favourite light beer or experiment with various flavour profiles by using an IPA, pale ale or a dark beer. I used a local beer made by Four Winds Brewing. They have a delicious series of vegan beers.

If you do not want to use beer you can substitute it with an unsweetened carbonated soda. It will cause the bread to rise slightly but it will not have the earthy, malty flavour.

  • Pre-heat oven to 350F. Grease a 9×5 inch loaf pan.
  • Sift flour into a medium-sized bowl. Add nutritional yeast, vegan sugar, room temperature beer and 1/4 of melted vegan butter. Mix together with a wooden spoon until just combined, do not over-mix or the will not be as tender.
  • Spoon beer into the prepared loaf pan. Top with remaining 1/4 cup of vegan butter and bake for 55-60 minutes or until golden brown on top. Check for doneness by inserting a toothpick – if it comes out clean it is fully baked.
  • Let sit in the loaf pan for 10 minutes. Insert a knife and travel around the perimeter to loosen any stuck bits. Turn out onto a baking rack and let sit for 5 minutes before slicing.

This recipe makes a very hearty bread with a crunchy buttery crust. If you prefer a softer crust (like a traditional bread) mix the butter into the batter instead of pouring it over the top.

This One Bowl Cheesy Vegan Beer Bread is incredible served fresh out of the oven with a dollop of melted vegan butter.
